Why this is hard
Long manuscripts have problems that short documents do not.
Word processors are not typesetting systems. They let you pick a font and a size, but they do not understand book typography: optical sizing, leading ratios, gutter margins, genre-appropriate pairings, or how body size determines every other element on the page.
Book typography is a craft. A Garamond with a small x-height needs to be set slightly larger than a sans-serif at the same nominal size. A thriller needs different typography than a literary novel. A 5x8 trim needs a different body size than a 6x9. Getting all of this right by hand for a 300-page book is impractical.

Changing your trim size adopts the trim's body default and scales the whole hierarchy.
You pick the typefaces, the preset, and the body size. You can adjust any element in the hierarchy. Commercial and device fonts preview as approximations and export with a disclosed open substitute, always listed on the export record.
